Chocolate / Cherry Muffins
Ingredients:
- 1 Box Betty Crocker Super Moist Devils Food Chocolate Cake Mix
- 1 - 10 oz Jar of Maraschino Cherries
- 3 Eggs
- 1/2 cup Avocado Oil
- Water
- Preheat oven to 350 degrees
- Drain Liquid from Jar of Cherries into a small measuring cup
- Add just enough water to the liquid until it measures 1- cup
- Remove Cherries from jar and, using kitchen shears, cut each Cherry into 3 or 4 small pieces
- In a medium size mixing bowl, mix the Cake Mix, Cherries, Cherry/Water Mixture, Eggs, and Oil together by hand
- Fill 12 paper muffin cups (about 3 tbsp each) with mixture, then bake for 16-20 minutes or until toothpick inserted in center comes out clean.
Ann’s Pineapple Cake
Ingredients:
Directions:
- 1- Box Yellow Cake Mix
- 1- Box Instant Vanilla Pudding
- 1- 8 oz. Package Cream Cheese
- 1- 8 oz. Tub Cool Whip
- 1- 20 oz. Can Crushed Pineapple with Syrup
Directions:
- Prepare Pudding according to directions
- Thaw Cream Cheese and Cool Whip
- Prepare Cake Batter according to directions (I use only 85%-90% of wet mix).
- Bake Cake and allow to cool.
- Drain Pineapple very well
- Spread Pineapple evenly over cooled cake (1st layer)
- Use mixer to blend Cream Cheese into Pudding and spread over pineapple (2nd layer)
- Spread Cool Whip over Pudding (3rd layer)
- Refrigerate overnight.
Cherry and Pineapple Dump Cake

- 1 (20-oz.) can pineapple tidbits
- 1 (21-oz.) can cherry pie filling
- 1/2 teaspoon vanilla extract
- 1/3 pkg. yellow cake mix.
- 1/2 stick unsalted butter
Directions:
- Preheat oven to 350°F.
- Lightly grease an 8” x 8” Pyrex glass baking dish with avocado oil.
- Drain and save the juice from the can of pineapple tidbits.
- Place pineapple pieces and cherry pie filling in a bowl; mix together.
- Pour mixture into the prepared baking dish.
- Sprinkle the surface of the filling evenly with the yellow cake mix.
- In the saucepan over low heat, melt butter then mix with vanilla extract and reserved pineapple juice.
- Pour the mixture evenly over the cake mix. Use a spoon to spread the juice mixture across the mix.
- Transfer the baking dish to the middle rack of the oven.
- Bake until the top is golden brown in spots and the filling is bubbling, about 45 minutes.
- Allow to cool
