November - Garlic Butter Shrimp with Asparagus

Chili Rellenos Casserole

INGREDIENTS:

INGREDIENTS:
- 1 Large Chicken Breast (Cooked and Shredded)
- 1 (10 ounce) Can Diced Tomatoes with Green Chilies.
- 12 ounces Mozzarella Cheese, (shredded)
- 3 large eggs.
- 2 tablespoons all-purpose flour.
- 1 (8 ounce) Can Tomato sauce.
- 1 Tbsp. Full fat Coconut Milk (Optional)
- 1/2 Medium Green Pepper (Finely Diced)
- Preheat the oven to 350 degrees.
- Grease an 8 X 8-inch baking dish with cooking spray.
- Mix the Shredded Chicken and 1/2 Can of Ro-tel together and spread evenly across the bottom of the prepared baking dish.
- Sprinkle with 1/2 of the Mozzarella Cheese.
- Mix together eggs, Coconut milk, and flour in a bowl; Pour over Chicken/Chiles mixture.
- Bake in the preheated oven for 20-25 minutes.
- Mix the Tomato Sauce, 1/2 Can of Tomatoes with Green Chilies, and Diced Green Pepper and spread evenly over the top.
- Continue baking for 20 more minutes.
- Turn broiler on. Sprinkle top with remaining Mozzarella Cheese.
- Place under the broiler until cheese is melted, 2 to 3 minutes.
Tater Tot Casserole
PREP TIME: 15 minutes COOK/BAKE TIME: 25 -30 minutes
INGREDIENTS:
INGREDIENTS:
- 2 Medium Chicken Breasts (Cooked and Shredded)
- 3 Tbsp EVOO (Extra Virgin Olive Oil)
- 1/2 medium onion, finely diced.
- 1/2 Cup Mild Diced Tomatoes with Green Chilies. I used Ro*Tel brand.
- 4-6 ounces Mozzarella Cheese, (shredded)
- I cup petite Diced tomatoes
- 12 slices of Uncured Turkey Peperoni (fully cooked)
- Add EVOO and onions to a 2 1/2 - 3 quart “oven safe” sauté pan, and simmer over medium/high and cook until onions the become translucent.
- Arrange frozen Tater Tots over the onions in one layer, covering the bottom of the pan, then cook over medium heat, (stirring frequently), until thawed.
- Once thawed, use a Teflon cooking tool to break all of the tots down until they resemble hash browns, then increase heat to medium/high, and continue cooking until they are nicely browned and begin to crisp. Be careful not to burn.
- Mix the Shredded Chicken, Diced Tomatoes, and Ro*tel together in a saucepan, and cook briefly over medium high heat until all ingredients are hot, then reduce heat and allow to simmer for 5 minutes.
- Remove the chicken and tomato mixture from heat and spread evenly over the Tater Tots.
- Cover with Mozzarella Cheese and preheat broiler.
- Arrange the pepperoni slices evenly over top of the cheese and place under the broiler until the cheese is melted and begins to brown (2-4 minutes).
